Ok, so not really. Although I AM that cool of a mom.... according to my little gobblers. I decided to make a meatloaf "cupcake" with sweet potato "icing". It turned out pretty delicious as the boys did ask for "another one, mom".
It was pretty simple, as I was making a meatloaf anyway, decided to put the beef into a jumbo muffin pan and baked for abou 35 minutes.
One little just couldn't wait for it to be put on the table, he just had to "SEE, MOM" for himself.
